Pork Steaks with Tuna Salad

Fabulous recipes can be found in the pages of your everyday magazine. Try these inexpensive dinner ideas and make the entire family happy!

Tuna Salad with Wonton Chips $3.18 per serving

5 Tbsp. olive oil
8 wonton wrappers, cut into strips
12. oz. fresh or frozen tuna steaks (thawed)
1/4 c. cider vinegar
1 Tbsp. sugar
1 tsp. finely shredded lime peel (optional)
1/4 head of Napa cabbage, shredded (6 cups)
1/4 of seedless cucumber, sliced or cut into strips

1. in a 12 inch skillet heat 3 Tbsp of olive oil over medium high heat. Cook wonton strips in hot oil until browned, stirring occasionally. Transfer to paper towels, set aside.

2. Lightly season tuna with salt and pepper. Cook tuna in the same hot skillet for 3 to 4 minutes per side or until some pink remains in center. Transfer tuna to cutting board; slice tuna for salads.

3. For dressing, whisk together remaining olive oil, vinegar, sugar and lime peel. Serve cabbage, sliced tuna and cucumber in shallow bowls. Top with dressing and wonton crisps. Serves 4.

Pork Steaks with Plum Salsa
$2.15 per serving

2 tsp. olive oil
2 10 -12oz. bone-in pork steaks
2 Tbsp. soy sauce
2 jalapeno peppers
3 plums, pitted and chopped
1/2 small red onion, finely chopped (1/2 cup)
1/2 tsp. ground ginger
1/4 cup honey

1. Heat oil in a 12-inch skillet over medium-high heat. Brush pork steaks with soy sauce. Cook steaks for 12 to 15 minutes or until done.. turning halfway through cooking. Remove from skillet; halve steaks, then cover and set side.

2. Meanwhile, for Plum Salsa, seed and finely chop 1 jalapeno, slice 1 jalapeno. Combine chopped jalapeno, plums, onion, ginger and honey in the skillet. Cook over medium heat, stirring occasionally, just until heated through. Spoon salsa on pork steaks; sprinkle with sliced jalapeno. Serves 4.


Grilled Texas Steak Sandwiches with Dilled Horseradish Sauce
$2.87 per serving

2 10-oz. top round steaks
Olive oil
Salt and freshly ground black pepper
1/4 cup sour cream
2 to 3 Tbsp. horseradish mustard
1 Tbsp. snipped fresh dill
4 to 8 thick slices of bread (for Texas toast)
Fresh dill sprigs

1. Trim any fat from steaks; halve steaks crosswise. Lightly brush steaks with oil and sprinkle with salt and pepper. Grill directly over medium heat for 3 to 4 minutes per side or until desired doneness.

2. Meanwhile, for horseradish sauce, in a small bowl combine the sour cream, horseradish mustard and dill; set aside.

3. Remove steaks to platter. Lightly brush each side of the bread with olive oil. Grill bread 1 minute per side. Serve steaks on grilled toast with horseradish sauce. Top with dill and additional salt and pepper. Serves 4.
